Amandine Quiche

Prepare this tasty quiche with your choice of vegetables.

Serves: 6
Prep Time: 12 Hours (for crust)
Cook Time: 10 to 12 Minutes and 30 to 40 Minutes


Ingredients

  • 1  1/2 CUP whole wheat pastry or bread flour (or 1  3/4 CUP spelt flour makes especially good crust)
  • 1/2 TSP salt
  • 1/3 CUP soft butter
  • 1/4 CUP ice cold water
  • 1/4 CUP sliced almonds
  • (OPTIONAL) 3 CUP broccoli, cooked chopped with 1/4 TSP nutmeg in place of herbs in Step 6
  • (OPTIONAL) 1 head spinach, steamed, well drained, chopped
  • (OPTIONAL) 3 CUP zucchini, unpeeled slices, lightly steamed
  • (OPTIONAL) 2 CUP asparagus, chopped, cooked
  • (OPTIONAL) 2 CUP sliced mushrooms, sautéed in 1 TBSP butter
  • 2 TBSP chopped green onion or onion
  • 2 CUP grated cheddar or Swiss cheese
  • almonds, well drained
  • 4 eggs, slightly beaten
  • 1  1/2 CUP Almond or Coconut Milk (or 1 CUP cream + 1/2 CUP filtered water)
  • 3 TBSP Parmesan cheese
  • 1 TSP curry powder or ground cumin
  • 1 TSP basil or marjoram leaves
  • 1/2 TSP salt
  • paprika
  • chopped fresh or dried parsley, or chives


Instructions

  1. Blend flour and salt; cut in the butter with pastry blender or with 2 table knives until dough is size of small peas; lightly stir in water in with fork until easily moistened.
  2. Gather dough into ball; wrap in plastic wrap. Let stand at room temperature for 12 hours.
  3. Soak sliced almonds for step 5.
  4. Place a piece of square wax paper on a plate; press ball of dough out like a large flat thick pancake 6" - 7" wide. Lay another square of wax paper over top of the dough.
  5. Chill in refrigerator for 30 minutes while preparing your quiche filling. This will make rolling the crust out easier. 
  6. Roll dough out between the two pieces of wax paper and shape into pie plate (see Rolling & Shaping Quiche Crusts, p. 161).
  7. Prick holes with a fork in several places on bottom and sides of crust; prebake at 400° in preheated oven for 10 - 12 minutes. The crust will be partially baked.
  8. Place the prepared quiche filling ingredients in the pie crust while it is still warm and bake according to the quiche recipe you are following. Beginning with a warm crust will assist even baking of the filling.
  9. Prepare one of the following vegetables: broccoli with nutmeg, spinach, zucchini, asparagus, or mushrooms.
  10. Place prepared vegetable evenly over bottom of pie crust, then remaining ingredients in order given: onions and then cheddar or Swiss cheese.
  11. Blend eggs, milk, Parmesan cheese, curry or cumin, leaves, and salt together and pour over all.
  12. Garnish with paprika and chopped fresh or dried parsley, or chives.
  13. Cover edge of quiche crust with a pie crust shield or foil and bake at 350° in preheated oven 30 - 40 minutes until knife comes clean out of center.
  14. Allow to stand 10 minutes before serving.
