Mashed Sweet Potatoes

Serves: 4 (About 3 1/2 CUP)
Cook Time: 20 Minutes


  • ​about 1  1/2 LBS sweet potatoes
  • 1/8 CUP (2 TBSP) butter
  • 1/8 CUP (2 TBSP) cream
  • 1 TSP honey
  • 1/2 TSP salt
  • 8 OZ can crushed pineapple, unsweetened, drained


  1. Peel and cut potatoes into small chunks.
  2. Steam potato pieces until very tender (falling apart when poked with a fork, about 20 minutes; see steaming).
  3. Place potato pieces, butter, cream, honey, and salt in mixing bowl and mash well.
  4. Fold in pineapple.


Tip: This recipe also works with yams.
