Broccoli-Carrot Medley

Add a little interest to plain broccoli by adding julienne cut carrots, and lemon juice, which also adds a delightful flavor to many cooked vegetables.

Cook Time: 10 Minutes


Ingredients

  • ​4 CUP (about 1 LB) fresh broccoli florets with stalk
  • 1 medium carrot (about 1/2 CUP)
  • 1 TBSP melted butter  
  • juice of 1/2 lemon (or 1 TBSP)


Instructions

  1. Clean broccoli; trim away tough outer layer of stalks, leaving about 3" of stalk; cut pieces lengthwise.
  2. Scrub and cut carrot julienne.
  3. Place carrots in vegetable steamer basket over 1 - 2" boiling water, cover and steam about 5 minutes; add broccoli and steam about 5 minutes longer.
  4. Blend butter and lemon juice; pour over vegetables just before serving (lemon juice will turn broccoli a sickly yellow-green if added too soon).

Tip: For variation, replace carrots with colorful bell pepper strips and/or slivers of red onion.
