Broccoli Cheese Baked Potatoes


Serves: 4
Cook Time: 1 Hour


Ingredients

  • ​Four 8 OZ baking size potatoes
  • 1 CUP Almond Milk (or 1/2 CUP cream + 1/2 CUP water)
  • 1 - 2 TBSP unbleached white flour (for thickeness desired) (or 4 TSP - 3 TBSP brown rice flour)
  • (OPTIONAL) 1/2 teaspoon salt
  • 3/4 CUP grated mozzarella cheese 
  • 1 TBSP Parmesan cheese
  • 1  1/2 - 2 CUP cooked fresh broccoli florets, cooked
  • 1/4 CUP chopped onion, lightly sautéed, if desired
  • paprika


Instructions

  1. Preheat oven to 400°, bake potatoes for 1 hour, Pierce through skin into centers with fork to release steam after 30 Minutes.
  2. In saucepan blend flour and (OPTIONAL) salt into milk with wire whisk until flour is smoothly blended.
  3. Stir constantly over medium heat until thickened.
  4. Blend in cheeses until melted.
  5. Fold broccoli and onion into cheese sauce.
  6. Split potatoes lengthwise and squeeze on both ends to fluff. Pour sauce over top and garnish with paprika.
