Broccoli Mandarin

A sweetly flavorful vegetable combination with pineapple.

Yield: About 5  1/2 CUP
Cook Time: About 15 Minutes


Ingredients

  • ​1 CUP sliced onion
  • 1 CUP carrots, cut diagonally in thin slices
  • 6 large mushrooms, sliced
  • 2 CUP fresh pineapple, chopped
  • 1 TBSP butter
  • 2 CUP broccoli florets
  • 3/4 CUP cold water (room temperature)
  • 1/8 CUP (2 TBSP) cornstarch
  • 1/8 CUP (2 TBSP) honey
  • (OPTIONAL) 1/8 CUP (2 TBSP) sliced almonds or pine nuts


Instructions

  1. Sauté onion and carrot in 1/2 CUP water, about 5 minutes; add mushrooms, pineapple, butter and sauté 5 minutes longer.
  2. Steam broccoli florets until just tender.
  3. Whisk cold water, cornstarch and honey together until smooth in a 1 CUP measuring cup and blend into sautéed vegetables; bring to a boil for 1 minute, stirring constantly with wire whisk until thickened and clear.
  4. Fold in and cooked broccoli, (OPTIONAL) and nuts; heat thoroughly, but do not boil.
