Carrots Hawaiian

Whoever eats these will rave about them!

Serves: 4


Ingredients

  • ​1 LB small to medium carrots, scrubbed
  • 1/4 CUP water (more if it evaporates while cooking)
  • 1/8 CUP (2 TBSP) lemon juice (fresh preferred)
  • (OPTIONAL) 1/4 TSP salt
  • 1 TBSP melted butter
  • 1 TBSP honey
  • 1 CUP pineapple tidbits, fresh or 8 oz. canned, drained
  • (OPTIONAL) minced fresh parsley


Instructions

  1. Cut carrots evenly in half, then in even lengthwise pieces; place single layer in fry pan with water, lemon juice, (OPTIONAL) salt and simmer in remaining ingredients until crisp-tender.
  2. Meanwhile blend butter, honey, and pineapple in a small saucepan, whisking honey thoroughly into butter before adding pineapple.
  3. Add honey-butter mixture with pineapple to carrots; cook about 5 minutes.
  4. Garnish with minced fresh parsley if desired.
