Coconut Milk Chocolate Pudding

Dairy-free Chocolate Pudding

This pudding is done in 10 minutes and plenty rich!

Serves: 7 1/2 Cup Servings
Prep Time: 10 Minutes
Chill Time: 1 hour



Ingredients

  • ​6 TBSP cocoa powder
  • 1/2 CUP honey
  • 3 CUPS coconut milk (or almond milk)
  • 3.5 TBSP cornstarch
  • 1 TSP vanilla
  • DASH salt


Instructions

  1. Whisk cocoa and honey together In a medium-large saucepan.
  2. In a one-quart measuring cup, whisk cornstarch into coconut milk until well blended.
  3. Gradually whisk milk mixture into honey-cocoa mixture in saucepan.  Bring to a low boil over medium-high heat, stirring constantly (a wooden spoon helps to stir around the edges of the pan). Continue to stir and cook at a low boil for 2 minutes.
  4. Remove from heat and stir in vanilla and salt.
  5. Pour into dessert dishes and chill.
