Cream of Celery Soup Sauce

Serves: About 1  1/2 CUP

Cook Time: A few Minutes


Ingredients

  • ​3 TBSP melted butter (or coconut oil)
  • 3 TBSP white flour (or brown rice flour)
  • 1  1/2 CUP diced celery
  • 1 CUP chicken broth
  • 1/4 CUP cream
  • (OPTIONAL) salt, to taste


Instructions

  1. Sauté 11/2 cups diced celery until soft in the fat. 
  2. Blend flour in with celery over low heat, allowing to bubble and cook while stirring with wire whisk for 1 minute.
  3. Remove from heat and gradually stir in chicken broth and cream with wire whisk until smoothly blended.
  4. Blend all ingredients in the blender.
  5. (OPTIONAL) Add salt to taste.
