Mexi Taco Salad

A traditional favorite with ground meat, or a meatless main
dish salad without the meat. Ground buffalo is in some
supermarkets and health food stores.

Serves: 4
Prep Time: 8 minutes
Cook Time: 12 minutes



Ingredients

  • ​1/2 lb. Seasoned Ground Turkey, optional (see ​Seasoned Ground Turkey ​recipe)
    or ground buffalo or ground beef
  • 4 cups broken dark leafy green lettuce
  • 4 cups broken iceberg lettuce
  • 151/4 oz. can kidney beans, drained well, rinsed
  • 1/2 cup grated cheddar cheese
  • 2 tomatoes, chopped small
  • 6 oz. tortilla chips
  • small avocado, cut in small chunks, optional
  • small green pepper, cut in thin strips, optional
  • 2 tbsps. plain yogurt - sour cream (1 tbsp. each, mixed)
  • 1 tbsp. oil & vinegar dressing or dressing of choice, to taste
  • 1 tbsp. salsa, to taste


Instructions

  1. Brown and chill:
    1/2 lb. Seasoned Ground Turkey, optional (see ​Seasoned Ground Turkey ​recipe)
    or ground buffalo or ground beef

  2. Toss together:
    4 cups broken dark leafy green lettuce
    4 cups broken iceberg lettuce
    151/4 oz. can kidney beans, drained well, rinsed
    1/2 cup grated cheddar cheese
    2 tomatoes, chopped small
    6 oz. tortilla chips
    small avocado, cut in small chunks, optional
    small green pepper, cut in thin strips, optional
    chilled ground meat, optional (from step 1)

  3. Serve each serving with:
    1 tbsp. oil & vinegar dressing or dressing of choice, to taste
    1 tbsp. salsa, to taste
    2 tbsps. plain yogurt - sour cream (1 tbsp. each, mixed)
