Zucchini Salsa

Yield: About 1  1/2 CUP

Cook Time: 2 Minutes


  • ​1/8 CUP (2 TBSP) coconut or olive oil
  • 1/4 CUP chopped onion
  • small - medium (8 OZ) zucchini, cut in very small cubes
  • 1/2 CUP chunky salsa


  1. Sauté onion with pinch of salt in oil until transparent
  2. Add zucchini and sauté until tender, about 2 minutes; stir in salsa and heat through.
